Are you looking for a super easy slow cooker soup recipe? Look no further, this chicken tortilla soup is a favorite among all of my friends and family. When we have gatherings this is what I make, or if I take someone a meal this what they ask for. So today I am going to share this delicious recipe with you. Here are the 5 ingredients you will need:

I just use frozen chicken breast from the bag, but you could also use fresh chicken, whichever you prefer.

  1. Spray the crock pot with cooking spray so it will not stick, and it will be easier to clean. You may also use a slow cooker liner as well.
  2. Place the chicken in the bottom of the slow cooker.
  3. Sprinkle the taco seasoning on top of the chicken.
  4. Open the salsa and pour on top of the chicken and seasoning. ( I used homemade salsa from my dad’s garden!)
  5. Pour in the whole container of chicken both. ( I use lower sodium, you may use what you like)
  6. Drain the beans, and then pour on top of everything.
  7. Set the slow cooker on about 6 hours on high. ( This will depend on your slow cooker, if your cooker seems to burn easily, set it for 8-10 hours on low)
  8. 30 minutes before you want to eat, remove the chicken breasts and shred the chicken and place back into the slow cooker.
  9. Let it cook for 30 more minutes.
  10. Now it’s time to eat!

Some people like corn in this soup, you can add the corn half way through.

We top ours with shredded Mexican blend cheese. You may also add avocado.

This recipe is very budget friendly and yields a large amount for left overs!

The only thing I can tell you would to maybe go online and search the brand name of ingredients I used. They are pretty general ingredients, so I would think you could find something comparable. I am no help with this, sorry. It is really good though, especially if you add a block of cream cheese to it. :)

I like to add cream cheese about an hour before I serve it, although I have put it in with everything at the beginning and it was just fine.I use a whole block, but I love cream cheese though! Thank you for stopping by!

This is cooking away in my slow cooker as I’m typing. We didn’t have any salsa on hand, but I had a can of Rotel, so I used that instead. I’m sure it will be delicious!

Very tasty and easy, and my husband loves it! Winner all around! I used only about 75% of the chicken broth to make it feel thicker and added the corn. This will be happening a lot this winter :)

You can throw in frozen corn when you add everything, or canned corn a few hours before you’re ready to eat.:) Thank you for trying this, let me know how you like it. Question. I notice the recipe doesn’t call for cream cheese but read ut in one of comments? So do I use cream cheese or no? 😁

That is entirely up to you. The cream cheese makes it a creamier soup and gives it a richer taste. I like it either way, but I mostly make it without to save on calories. Thank you for stopping by!!!
